I'm way excited about the cilantro garlic sauce that I have planned tonight and also the egg roll bowls for tomorrow night. This menu is an easy way for us to enjoy a wide array of healthy foods and still stick to our lower-carb weekly goals (don't worry, we eat like college kids on the weekends ... pizza, Chinese, beer, ice cream).
After ballet today, we are headed to Trader Joes to pick up a few ingredients -- ground pork, coleslaw mix, sesame oil, cream cheese, canned tomatoes, lime, onion, carrots, kale. We also need more coffee and olive oil. Can you get coffee pods at TJs? I'm not even sure. I'll also try to pick up a few lunch-type items to have around the house like some sliced cheese (I could eat grilled cheeses daily) and deli meats. And if I can make it out of the store without picking up a jar of cookie butter, then it will be a big win.
What's on your menu for the week?
Trader Joe's k-cups are my favorite! They come in a filter cup rather than the normal plastic k-cup and I think it makes them stronger.
ReplyDeleteyou can get the pods at TJ's, and I highly recommend the kona coffee dipped cookies- SO GOOD! I'm also currently loving the Greek style feta salad dressing I picked up there a few weeks ago.

ReplyDeleteTikka Marsala simmered over chicken (grab a jar from Trader Joe's or target!!), steamed broccoli (the frozen one that you nuke for 5 min..praise hands!!) and brown rice! Super simple!! Super Yummy!!
ReplyDeleteI love egg roll bowls and have found that adding a few wonton strips (near croutons/salad toppings in my grocery store) on top give them nice crunch and texture. Side note, I haven't had good luck with the Trader Joe's K-cups, but it may be because I have an older machine.

ReplyDeleteI wish for the life of me that I could come up with a meal planning system for one...few things irk me as much as cooking between 12 hour shifts. I should think of something where I can reuse leftovers!
