Our Super Bowl Appetizers: Three Ingredients Only

I looked around our friends' home last night at our Super Bowl get-together and thought, MY how things have changed!

We had four couples present, four kids under 4 years old, daddies corraling kids who needed tears wiped, mamas checking diapers, me feeding Camille dinner at a kid's table (a departure from her high chair) and trying to not end up with pureed sweet potatoes all over the place, two dogs hoping for a rogue piece of sausage to hit the floor. We were back home by halftime and Ian mentioned that it was the first time he'd actually really watched any of the game, ha!

With that said, Super Bowl appetizers need to be quick and easy these days. Ain't nobody got time for a nine-ingredient amuse-bouche.


I presented these appetizers on the Saturday morning news over the weekend, and you can see that clip here if you are interested (please be gentle, I am nervous as hay-ell before these unscripted, unpracticed, live segments).


Deconstructed Pizza Skewers 
Ingredients: 
 Parrano Cheese, cubed 
Pepperoni slices 
Whole black olives 

Directions: Skewer together the cheese cube, an olive, and the pepperoni (folded) with a toothpick Optional: serve with cold marinara sauce for dipping. You could also add in other typical pizza toppings - green pepper, jalapeno, etc.



Pimiento Cheese + Bacon Cups 
Ingredients: 
 Pimiento Cheese 
Phyllo Cups 
Bacon, for garnish 

Directions: Bake the phyllo cups according to directions. Fill each phyllo cup with a heaping spoonful of pimiento cheese and top with a piece of bacon for garnish. 



Mini Chicken + Waffles 
Ingredients: 
Chicken Nuggets 
Mini Eggo Waffles, separated 
Maple Syrup 

Directions: Heat chicken nuggets and waffles in the oven at 350 degrees until crispy. Top each mini-waffle with a piece of chicken and skewer together with a toothpick. Drizzle with maple syrup right before serving.

(note: for ease, I just used regular syrup this time. in my original blog post about this recipe, I used a jazzed-up and very tasty syrup -- you can see that post here)
