We had a really nice weekend together with the highlight being a trip to Greenville, SC for one night to celebrate my sweet nephew's first birthday! Laura did such an amazing job with the party decor.
After the kids went to bed Saturday night, Laura and I hopped around the corner to the neighborhood sports bar to pick up dinner for the four of us. I had a glass of wine and she had a beer and we shared fried mushrooms while they prepped our to-go order. It was such a nice time to catch up and take a breath.
And the next day we played around with some lipstick combos and she used the new volumizing hairdryer I'm loving.
Today I'm mailing out eight packages of lipsticks that I readied last night and also working on a monogrammed hairbow custom order for a sweet little newborn girl. I'll be mapping out our menu this week (I'm building my Walmart shopping list on the app as I type this) -- we will be eating at home Monday and Tuesday night. I have bunco on Wednesday and Ian will just want something simple like takeout wings or a chopped salad. I already have 3 zucchini in the fridge that need to be baked soon ... anyone have a good idea to use that?

ReplyDeleteCut zucchini into wedges . Heat pan with olive oil and throw a little salt and pepper in. Throw zucchini wedges in until they brown about 5 minutes.
Throw some oregano and lemon zest and a little lemon juice on the wedges and cook for another minute. So easy and tasty!
I made Skinny Taste's Santa Fe Turkey Zucchini Boats last week and they were so yummy! I will probably add a little bit of taco seasoning to my turkey next time just to give it more flavor. The "boats" heat up good for lunch the next day too!

ReplyDeleteThis is my very favorite recipe for zucchini and summer veggies. It's adapted from Ina Garten/The Barefoot Contessa, and you can adjust it to use the veggies you have on hand or that your family likes. I sometimes use yellow squash for half the zucchini, add eggplant, or in the winter, substitute root veggies for the zucchini/squash/tomato.
