Chicken + Waffles {holy moly}

Recently we were double-dating with our friends on a Friday night, and the topic of chicken and waffles came up.

None of us had ever had this dish but we were intrigued.  Majorly intrigued.

We all got together again that Sunday for football (guys = happy) and appetizers (girls = happy).  I figured this was the perfect time to surprise everyone with chicken and waffles!

I used Mint Love Social Club's idea of the mini Eggo waffles as the base.
 
For the chicken, my first thought was YES! Chick-fil-A chicken nuggets! and that was followed immediately by a NO! it's Sunday and it's clooooooosed goshdarnit.
 
I went to plan B, which was pre-made chicken tenders from the grocery store deli.  I was making a few apps and that was just the perfect shortcut I needed. I cut the tenders in bite-sized pieces and put them and the mini-waffles in the oven to heat up.  Then I just stacked them.  Easy!
 
 
For the sauce, I found this idea from Southern Living and knew it sounded perfect:
 
Peach-Horseradish Maple Syrup
 
1 cup maple syrup
1/4 cup peach preserves
2 teaspoons prepared horseradish
1/2 teaspoon coarsely ground pepper
1/4 teaspoon salt
 
Stir together maple syrup, peach preserves, horseradish, pepper, and salt in a small microwave-safe bowl. Microwave at HIGH 30 seconds or until warm. 
 
They got a drizzle of this goodness along with a sprinkling of chopped green onions and they were ready to serve!
 
These were a H-I-T hit.  The next time I host Supper Club, I most certainly will be spoiling the gals with these!
