PB+J Cookie Recipe

I confess... I've consumed more holiday cookies this season than I think I ever have before.  And it's been lovely.

I attended my first EVER cookie swap this year at Dee's home -- see her recap here.  It was a lovely afternoon with lots of good girl time, food, and drinks.  She made my Rosemary Rosé as one of her cocktails, and you can get that recipe by visiting this post.

When it came time for me to plan what cookies I was going to make, I wanted something that was a) easy, b) made from a lot of ingredients I already had, and c) unusual enough to stand out a little in the crowd.

So I present to you my PB+J Cookies!


Maybe they aren't the prettiest, but I'll be darned if they aren't yummy.  I left a small plate of them with Ian at home as he was watching football with one of his buddies.  His friend ate all 6 cookies in record time I hear.  That's okay, I brought some back from the party for Ian to enjoy.  Plus he got to be my taste-tester as they came out of the oven.  :)

I first made these Saturday evening and they were a big fat cookie FAIL.  I used a packaged peanut butter cookie mix and it just tasted all wrong.  Bland and just "off."  Plus the bottoms were burnt.  In the trash they went.

Saturday morning before the party, I searched some recipes on my phone to see if I could come up with a peanut butter cookie recipe that I could make from scratch with (key phrase) ingredients I already had in the pantry.  And just like that, Allrecipes came to the rescue with an easy peasy 3-ingredient recipe.  I then just tweaked that recipe to make my own version with the addition of the jam.  So without further ado...

PB+J COOKIES

1 cup creamy peanut butter (regular PB, not the natural kind)
1 cup sugar
1 egg
Jelly or jam of your choosing

Mix together the peanut butter, sugar and egg, and roll into small round balls.  Using your thumb, make a small indentation in each cookie.  Spoon a small amount of jam or jelly into the indentation.  Bake at 350* for approximately 10-12 minutes or until done.

    I've never heard of PB&J cookies before. Does the jelly harden a little bit?
