Hello From OKI

Our week at Oak Island beach started off with a bang as my cousin Ben married his sweetheart Jennie. They got hitched in the most gorgeous setting -- under large trees and overlooking the water in Southport, NC. It was a true family affair and we all  helped out in ways big and small. One neat thing was that Jennie wore the same wedding veil that my mom wore, then my aunt, then me, then my sister Laura. 


We had to leave the reception early to go check in to our beach house for the week and get Camille settled for the night. She usually goes to sleep at 7 but she was WIRED so Ian and I took her across the street to the ocean and let her play in the water and sand in her little smocked dress. She got soaked and sandy. It tired her out (and us, too!). 


Since then, we have just been relaxing, chasing Camille around, eating well, and having good family time. Ian could only stay Saturday night as he was unable to take this week off. Since then, my brother-in-law, middle sister, and Dad have also had to head home. Now it's just me, Millie, Mom, and Laura.

Josephine's Halibut with Arugula Salsa Verde

Today I have a guest post from a fellow Charlotte blogger who has a terrific eye for style and a passion for cooking beautiful, clean food. And, she is a sweetheart to boot! Please meet Josephine and enjoy her recipe for halibut with arugula salsa verde and two delicious accompanying side dishes.

Hello! My name is Josephine and I have relatively new blog called Themes of my Life.  I love everything food, fashion and entertaining.  I was so excited when April asked me to do a guest post {my first guest post!} on her blog about this amazing meal that I made for dinner last week.
I have been trying to eat a lot cleaner and do an occasional cleanse. This recipe was healthy and delicious. You could chop all of your ingredients for the salsa verde but I found it was easier to put it in the food processor.  Anything to make my days a little easier, right!?!?


Halibut
3-4 pieces of wild caught halibut (5-6 oz pieces)
2 tbsp chives, chopped
2 tbsp flat leaf parsley, chopped
1 tsp lemon zest
1-2 tbsp olive oil
Salt & pepper, to taste

Mix chives, parsley and lemon zest in small bowl and refrigerate for 30 minutes to 1 hour.  
To prepare halibut, place on parchment paper-lined baking sheet.  Drizzle with olive oil and sprinkle with salt and pepper.  Press chive-parsley-lemon zest mixture onto to top of fish.  Bake at 350 for about 10 minutes.

Arugula Salsa Verde
1 cup of arugula
2/3 cup flat leaf parsley
1/4 cup capers, drained
juice and zest from 2 small lemons
1/4 olive oil
1/4-1/2 tsp crushed red pepper flakes

Put all ingredients in food processor and pulse until chopped and combined.   Place salsa verde in refrigerator for 1-4 hours.  Remove from fridge an hour before you want to serve it so that it can come up to room temperature.   Place halibut on individual dishes and top with Arugula Salsa Verde.  Serve with the following delicious sides!

Roasted Grape Tomatoes


16 oz grape tomatoes
2 tbsp olive oil
2 cloves of garlic, finely minced
2 tbsp fresh thyme
Salt & pepper, to taste

Preheat oven to 400.  Combine all ingredients in a bowl.  Stir until everything is evenly distributed.  Pour onto foil-lined baking sheet and cook for 15-20 minutes or until tomatoes have softened and started to burst.

Haricot Vert with Almonds


2 tbsp olive oil

1 package fresh Haricot Vert (about 16 oz. from Trader Joe's)
Salt & pepper, to taste
juice from half a lemon
1/4 cup toasted slivered almonds
2 tbsp good block feta,  crumbled

Heat olive oil in medium-large skillet (make sure it's one that has a lid) over medium heat.  Add haricot vert.  Stir well.  Cook with lid on for 5-7 minutes.  Add salt, pepper and lemon juice.  Cover with lid and cook for additional 5-7 minutes.  Remove lid and add almonds.  Cook for 2-3 more minutes with lid off.  Remove from heat and place in serving dish.  Top with feta.



Enjoy!

We are doing a small screened porch update. We previously had cafe lights strung around the perimeter of the screened porch, but we have both been wanting curtains in the room. We tackled this in a major DIY way and got pretty creative. It's 50% done but you know I'll share photos when the curtains are hung! These are some of the photos of outdoor areas we love.


Make Drop Cloth Curtains for Outdoor Spaces and Porches.  Rather than cutting excess and hemming that side, this crafter folded the excess over as a valance.

Drop cloth curtains: I have a total of 5 of these curtains on my patio! The drop cloths were less than 10 dollars a piece at Home Depot. (Remember, Home Depot drop cloths do NOT have seams down the middle, Lowe’s drop cloths do.) Here’s a run down of the price of my patio curtains: 5 drop cloths -$50.00 5 sets of ring clips – $25.00 metal poles – $10.00 hooks – $6.00 primer and paint $6.00 Grand Total: $97.00

My cousin gets married this weekend, and I can't WAIT! I absolutely love weddings, and this one will be a really great family get-together. And being that the bride and groom are very relaxed and can appreciate this strong summer heat, they have asked for casual wear ... sundresses for ladies and shorts for men. Score.

Lastly, about those crazy life changes ... today is my final day of work. Makes me so nervous, but I have faith that this is the right move for our family. I received some really wonderful personal emails -- thank you (you know who you are). And I absolutely can't wait to jump into my new role and treat it like a job. My dream job! My Favorite Easy Appetizer

Last week for Supper Club, I made my very favorite appetizer. This app also happens to be E-A-S-Y which was a huge plus in my book. Not a single crumb remained!


Baked Brie With Preserves

Round of brie cheese
Preserves of your choosing (I went with strawberry)
One can of crescent rolls

Remove brie from paper and cut top rind off. Pop open your can of crescent rolls and separate into two main square-shaped pieces of dough. Press perforated seams together lightly. Put one square under cheese round and top the cheese with preserves of your choice. Add the second square of the dough on top of the cheese, and slighly press together so brie is totally covered. Place on a baking sheet coated lightly with nonstick spray, and bake according to crescent roll package directions. 

No crackers needed ... just delicious melted brie wrapped up in flaky pastry crust!

Skin Product Face-Off

A little more light-hearted post today :) Let's talk SKIN!

Recently I switched up two of my tried-and-true products, my cleanser and toner, for different brands. Now that I've been using both of the new products for a while, I thought I'd come back here to share my two cents.


So, here are my new items -- Bliss Daily Detoxifying Facial Toner and Cerave Hydrating Cleanser.

Here's how they stack up against my original favorites, Bobbi Brown Hydrating Face Tonic and Philosophy Purity Cleanser.


Skin Product Face Off


Cleansers:
Philosophy Purity Cleanser, $32 for 16 oz. (Amazon price, here ... same size is $36 at Ulta)
CeraVe Hydrating Cleanser, $7.28 for 12 oz. (Amazon price, here)

I've been using Purity for several years now, but I couldn't turn down the price and dermatologist stamp-of-approval on CeraVe. I went with the hydrating line to (hopefully?) help combat some of the fine lines around my eyes that drive me nuts. So here's what I think -- the CeraVe hydrating cleanser does a good job of cleaning my face makeup, but stubborn eye makeup often proves way too difficult for removal. Plus, it leaves my skin with a hydrating film feeling, which I know is probably a good thing, but it is just not the clean feeling that I've grown to love from Purity. I want to give the CeraVe foaming cleanser a shot, but if I don't love it as much as Purity, then back to Philosophy I will go.

Toners:
Bobbi Brown Hydrating Face Tonic, $30 for 6.7 oz. (Nordstrom price, here)
Bliss Daily Detoxifying Facial Toner, $26 for 6.7 oz. (Amazon price, here)

I used the Bobbi Brown toner for over two years before wanting to give the Bliss toner a shot. Lucky, I have a sweet friend who passed her bottle down to me since it just didn't work for her skin. I'd read a few reviews online that it does leave a somewhat moisturizing film on your skin that some reviewers called "soapy." I have definitely experienced that. I don't believe it has led to breakouts for me (it's not uncommon for me to get an occasional small one, but they are mainly hormone-related) but I still don't think it holds a candle to the Bobbi Brown toner. Even just for the smell alone! Bobbi Brown smells heavenly. Since the prices don't differ too much, it's not hard for me to justify the move back to Bobbi.

My Last Week of Work

This is my last week of work. Well, at least work in the "traditional" sense. I am going to be staying at home with Camille!

I'm absolutely excited ... and big-time nervous, as well.

When I graduated college in 2004, I did some sales work for a family friend for the first year and a half of my new life in Charlotte. I then fought hard to switch industries to the corporate health and wellness field and scored a postion that I worked for a year and a half until I was contacted by my current employer. I have now been working there in the same field for 7.5 years, and I help companies implement health and wellness programs for the wellbeing of their employees. I am not a nurse, but I work on a large team of very sweet nurses and have enjoyed the opportunity to create really great relationships with them and also outside of our office walls -- with our clients. I love them. They were so excited when I got engaged, then married, then when I passed on the news of Camille.

For the past year, I have had a wonderful situation -- I've been able to work from home 4-5 days a week and I have only had to spend one night away from home for work. Things have changed, though, and they now need a little more from me than what I can offer. At this point, resuming my very aggressive travel schedule just won't work with our family needs.

I let my manager know of this issue a month before what will now be my last day -- this Friday. We've added two new staff members who will be taking over my position, and I have every bit of confidence that they are going to take it and run with it. I am so impressed by them. I joked with them that our clients will say "April who?"  :)

I do feel like it is a dream come true to be able to stay at home with Camille. I guess I wasn't expecting to feel so nervous about it, though. She has been in a wonderful daycare situation with teachers who care for her and teach her so much. Last week she came home with a "passport" and had pages for each place they had learned about. Adorable! So, I definitely feel like I have big shoes to fill there, but that's a good type of pressure to feel. I welcome that sort of pressure. It will keep me on my toes.

Of course I am nervous about a) going down to one income, and b) putting the additional stress and pressure on my husband to supply that. We will be watching our spending and reducing where we can. I've been taking steps to ready us for this change (like paying off my car recently). The tightened expenses will be very much worth it.

Having been in the workforce for 11 years, I am also scared to voluntarily exit it. At some point, when I need to or am ready to work again, I hope it is not really difficult to get hired again for a somewhat niche career like mine.

The past few weeks have been difficult -- having really great, productive days at work that make me feel proud for what I've accomplished and how far I've come. Feeling powerful in a dress and heels. Having a reason to have curled hair by 8am. Having major structure to my day. It is hard to move away from this to the unknown when exiting the workforce.

I hope you don't mind, but I am going to turn off comments on this post, just because I don't want the comments to sway one way or another about the greater benefit of staying at home moms or working moms for my other mama readers. I absolutely welcome emails (alizadventures@ymail.com) but just want to stay sensitive to what I truly believe in ... that you have to do what works out best for you, for your family, and for what makes you the happiest! For different families, this means different things.
