Superbowl Sunday

This Superbowl Sunday was definitely a success in my book, mainly for the reason that Ian and I did not end up with a double-case of horrifying food poisoning like we did 2 years ago.  In my small apartment with one bathroom, mind you. 

Let's just say ... we bonded.

This year was a lot less dramatic, and we were able to enjoy the company of our good friends and some tasty food as well.

We had quite a spread -- homemade pretzels and pretzel bites, deviled eggs, ham delights, brownies, two kinds of jalapeno poppers, quesadillas, and a veggie tray.  I made crab meltaways (bubbly crab & cheese mixture on top of English muffin halves), pigs in a blanket, and cookie dough dip that I found on Pinterest.

Our friends Lindsay and Casey hosted everyone, and I do have to say, they have the perfect home for a Superbowl party!  Big television for the guys with plenty of couch space, and the room opens to the kitchen, where we girls hung around a large island and nibbled.  They also have a television mounted in their screened porch so the party could spill over into the outdoors.






We bet on the final score of the game, and the pot got up to around $75.  Ian and I didn't walk away with the winnings, but it made the final moments of the game really exciting to watch.




Now for this amazing dip recipe from Add A Pinch.

Cookie Dough Dip

Ingredients
  • 1 8-ounce package cream cheese, softened
  • 1/2 cup butter, softened
  • 1 cup powdered sugar
  • 2 tablespoons brown sugar
  • 1 1/2 teaspoons vanilla
  • 1 cup chocolate chips
  • 1 cup toffee bits
Instructions
  1. Cream together cream cheese and butter.
  2. Add all remaining ingredients and mix until well-combined.
  3. Serve with graham crackers or apple wedges.
I served with Granny Smith apple wedges and used light cream cheese to attempt to make it a smidge healthier.  After making it, I've decided to give it a shot with fat free cream cheese next time. 

It was absolutely delicious, and not a bit was left over at the end of the party!

Friday Notes + Fun Facts

Thank goodness it's Friday, and we've officially made it through the week!  I'm even celebrating by breaking out of my black purse rut and gettin' a little craaaazy.


This week was nice because it didn't involve any airports.  I did spend 2 nights in Asheville, NC, but I got to travel with a co-worker (a rarity).  Having a dining partner is just way too much fun when you're used to grabbing meals solo.  My favorite meal was at Bouchon, where we had bottomless bowls of mussels.  Dessert afterwards at French Broad Chocolate Lounge was absolutely necessary.  This was my second trip there, and you can read about my first visit in this post.

Returned to the hotel with a big ol' slice of this cake.

My 11 Fun Facts:


1. My birthday is New Years Day, and I was the first baby born in the year 1982 in our county.  My parents got lots of fun goodies like free diapers and dry cleaning, and our picture was in the paper.


2. In high school, I was the President of the National Art Honors Society, but I'm not really that great at most forms of art.  I'd much rather do something crafty than something that is truly "artistic."


3. I wear my watch on the incorrect wrist ... I am right-handed, and it is on my right hand.  This is because when I got my first ever "adult" watch -- gold-tone with a stretchy metal band -- I was so in love with it and I decided it made sense to wear it on the hand that I wrote with so I could look at it lovingly while I wrote.


4.  I have opened a hotel room door to find Former President Jimmy Carter standing in front of me ... true story.  A fun post for another day.


5.  I have a tendency to be a procrastinator, but I will always get things done.  And you probably won't ever see me sweat it.


6.  I was a Spanish major in college with a concentration in Latin American Studies.  I love everything that has to do with Latin America and I am still moderately fluent.  Junior year of college, I studied abroad in Costa Rica where I learned how to surf and was able to perfect my salsa dancing moves.


7.  My name is April, but people who mistake my name always call me Rachel.


8.  I never sleep with my rings or watch on, but when I am traveling, I always sleep with my wedding band on.  That way, if there's a fire and I have to run out, I'll at least have my band on.  (My husband would probably say - Honey please grab the engagement ring before you flee the burning room too.)


9.  I'm always up for an adventure, and I'm slightly obsessed with celebrities.  Combine these two traits, and what do you get?  My girlfriend Kerry and I have partied with Tiger Woods and Derek Jeter in DJ's penthouse suite at Trump Towers.  I swear it.  And I also swear that neither one of us did anything remotely sketchy ... we were good Southern girls.  But Kerry told me recently she hasn't had a single margarita since that night -- and that was in 2006.


10.  When I was younger, I was bitten by a dog on the back of my calves as I was running away from it.  Since then, I was always really nervous around dogs, especially large ones.  When I met Ian and found out he had a husky, I thought -- this probably will never work.  Three years later, and I'm completely smitten with our large and loving furbaby.  He's changed the whole way I think about dogs.


11.  I believe in the power of treating yourself on Friday mornings on the way into work.  My fave treats?  An iced chai tea with soy milk from Starbucks or the pomegranate smoothie from Smoothie King. 


Now, because you made it through all of the fun facts, here is a little something for your time:

Here are the questions Natasha posted:


1. What is your profession?  In a broad sense, I work in corporate wellness.  I have several clients that I work with to implement all sorts of health and wellness initiatives -- onsite health screenings, flu shot clinics, weight loss challenges, pedometer challenges, working with people with chronic conditions, et cetera.  When I travel, it's mostly to go oversee screening clinics or flu shot clinics that are happening onsite with our clients.


2. How would you describe your style?  I love to wear anything that's feminine, pretty, and fun.  Bright colors lure me in as do prints.  I don't often spend a whole lot of money on clothes -- and I keep my clothes for a long time.  Places like TJ Maxx and F21 are great for me because I can spruce up my wardrobe rather frequently with fun, trendy pieces.


3. What one make-up product can you not live without?  Right now, as you know, I'm obsessed with L'Oreal Extra-Volume Collagen.  Another fave is Presciptives liquid concealer, which is no longer made.  For that reason, my last tube is now liquid gold to me.


4. If you could be besties with one celebrity, who would it be?  Natasha summed it up perfectly by saying Reese Witherspoon.  What a cutie.  I'd also love some QT with Kristen Bell.


5. What is your dream vacation?  I've never been to Europe, and Ian knows that it's a priority before we start thinking about adding to our little family. 


6. What magazines do you subscribe to?  Due to a heartfelt plea from my husband (I literally had STACKS of magazines in my old apartment when I lived alone), I've really taken a lot of steps to cut down on my subscriptions.  Right now I only subscribe to Real Simple, which I love.  Decor, makeup, fashion, organization tips, and dang good recipes -- it has it all.  But a year ago, I was also getting In Style, Shape, Brides, Glamour, and Bazaar.  Wow, that's kinda crazy to admit.  I also have a stack of old Domino magazines in a magazine basket in our guestroom that I'll never part with!


7. If you could have a special talent {that you don't currently have}, what would it be?  I would love, love, love to be able to sing well.  And I would also love to be able to play the piano well.  I took piano lessons from a next-door neighbor when I was younger.  My parents arranged the lessons on a barter system ... hour-long piano sessions for a large bag of dog food.  Not lying.  Dad is in pharmaceutical sales on the veterinarian side, so he had easy access to free dog food.  Now: imagine young, awkward April marching across the lawn with a large bag of dog food on her way to get piano lessons.  True story.


8. What is your favorite breakfast food?  I eat pretty healthy during the weeks -- Greek yogurt or a sliced up apple or pear.  I'll have hot mint tea or iced green tea.  Weekends, I love my husband's breakfast sandwiches me makes us and some nice coffee with good flavored cream.


9. If you could do anything, what is your dream job?  I've always wanted to be a cashier at a grocery store.  Quick, easy conversations with people, and you get to see what they're buying and try to guess at what they will be making with those ingredients.  I'm dead serious.


10. What is your guilty pleasure?  I love the Housewives series, much to Ian's chagrin.  I also consider a guilty pleasure to be taking a shower at night and washing my face AND brushing my teeth right there in the hot shower. 


11. What is the best piece of advice you've ever received, and who gave it to you?  It's difficult to choose just one piece of advice, but I love this quote that I stumbled upon once while going through a hard break-up: "Sometimes you have to be willing to give up what you have in order to get what is waiting for you."  It's always been a favorite of mine to share with friends.

Enchilada Recipe. Make Now!

So, I totally teased you the other day when I mentioned that I made the best recipe in the history of mankind and then I didn't give you the recipe.  But I promise, the wait was worth it!
First things first:  Pinterest ... I love you.  I love your gobs and gobs of delightful recipe pictures that expose me to a culinary world I can't find in my own cookbooks.  Or with a Google search, or even an Allrecipes search, sometimes.

In other news, I added a picture of us to the dining room!


Cutting the cake at our wedding.  Which just happened to occur under the same chandelier as the one that hangs in that very dining room, which I told you about in this post.


I had it printed in a sepia tone to pick up the warmer tan hues of the frame and the toile fabric on the dining room chairs.

Now, almost time to get the chair rail added to the dining room -- can't wait!

Tory Burch OUTLET, Say What?

Last week in sunny Orlando, I found paradise...


Not the palm trees silly, but the Tory Burch Outlet!

Cue the angelic voices ... aaahhhhhhhhhhhhhhhhhhhhh.


First item that made its way back behind the heavy orange velvet curtain with me was this poppy-colored tunic.  It was my size, marked way down, and just my style.


And boy oh boy, was it cute.


Only one issue.  The upper arms were really tight.  I think this tunic was made for all of those skinny-armed mamas that live off of chardonnay and Goldfish alone.  Which is not me.

I tried to make it work, I really tried.  But it was also fairly sheer (you can see the top of my leggings in these photos) and I didn't want to have to always layer it with a long tank.  I sort of had my heart set on a bag, anyway.


But it WAS cute, right?!

So at first this bag had my attention.  It was classic-looking and good for the summer.


But it's not the one I ultimately came home with.  What's in the bag below, you ask?


This precious tote!  It is patterned in purple/lilac hues, and you can't even see the best part in this picture.  A long, purple, suede tassel.  It hangs from one of the tote's handles.  In this picture it is not showing because it was still wrapped up in tissue paper and I wanted to protect it for my plane flight.


I love my new little tote, and it's also fun having a reminder of my time in Orlando.  I worked hard on that trip, but I believe it's always important to find a little time for yourself!

Weekend Wrap-Up

So, a strange phenomenon has happened recently -- I think I've flip-flopped my philosophy on the weekend.  After graduating college, I liked going out both Friday and Satuday nights (and Tuesday, and Wednesday, and ... you get the point).  But since getting older, and --ahem-- wiser, I have bought into the whole "relax on Friday night after a long workday, and go out Saturday night" way of thinking.

Only in recent months have I started realizing that if you rally on Friday night and go out, and then save your relaxing evening for Saturday night, in some strange time-warp way, it makes the weekends feel so much longer!

At least, to me.  You might think I'm a little crazy.

So we did just that this weekend.  Friday evening wasn't looking too good for going out because Ian was going to have to work late, but things fortunately wrapped up earlier than expected, and next thing you knew, I was throwing a bottle of cabernet into my Vineyard Vines wine tote and we were out the door.  We celebrated a friend's new job at his house with pizza, salad, lots of happy dogs, and adult beverages.

Saturday, Ian and I tackled our office.  After painting our dining room recently, we realized a gallon of paint was an  inexpensive and relatively quick way of giving a room a complete makeover.


We painted a few swatches on the wall and made a unanimous decision -- the middle swatch!  It has a touch of green in it, which compliments our area rug in the room and a green leather chair. 

We're still waiting on the crown molding to be put up this week, but here is a sneak peak of the room with a larger reveal coming soon:


Between painting the first and second coat, we got outside for some much-needed fresh air.  We went on a run and then looped back by our house to pick up our dog Drake and take him on a walk.

That evening I cooked a great meal that I pinned on Pinterest -- recipe to come soon.  Ohhhhmygoshhhhhh it's good.

Yesterday afternoon, Ian and some of his guy friends went shooting out at a farm and I got chores done around the house (read: 10% paying bills and 90% catching up on blogs).  Later we relaxed with friends at nearby Selwyn Pub and had a few beers.  Our favorite Sunday afternoon tradition.


And on an unrelated but equally fun note, a big thanks to Hopsy of Monograms and Manicures for introducing me to the fabulousness that is Red Stamp.  I downloaded the app immediately on my iPhone and have had so much fun playing with it.  With this app, you can create invitations and cards (and even include photos!) and send to people via email, text, Facebook, and Twitter.  There is even an option to have your design turned into a paper postcard and have it mailed.  Too smart, too smart.



Those are cards that Ian and I sent to my cousin and my aunt for their recent birthdays.  With my hectic travel schedule, it makes remembering someone's special day or sending a quick, casual thank-you that much easier.

A Challenge, But Not Impossible

If you don't mind me painting with a slightly broad brush, you could quickly sum up what I do for a living by saying it is in the health and wellness field.

And you all know that I travel quite a bit for my job.  In fact, yesterday was the first day I've been back in the office in the last two and a half weeks!

When traveling, eating healthy can be a challenge.  Not impossible mind you, but not the easiest.  When you're dining solo and missing home, it's easy to justify a comfort meal like creamy, cheesy pasta.  With bread.  And wine, of course.  If nobody is there to witness it, did it really ever happen at all?  :)

But in order to practice what I preach, and also to make up for the fact that I pretty much detest hotel gyms (treadmill snob here) -- I make it a point to eat healthy.

My go-to staples for travel meals are salads, soups, and wraps.  They aren't as costly as sitting down to a filet, and they are more like what I would eat on a regular weeknight at home. 

I don't mind dining in restaurants alone, but my favorite thing to do is sit at the bar and sip on a glass of wine while they fix my to-go order.  That way, I get a little bit of social time, but I can eat my meal alone in my hotel room without having to make small-talk with the bar-flys. 

Another trick of mine is to find a nice grocery store.  Whole Foods, Earthfare, Fresh Market -- I love these.  The prepared foods area is an easy way for me to get vegetables and fruits in my diet.  While in Portland recently, I stopped in for dinner at a local co-op where there was a plethora of healthy choices ... raw, vegeterian, and vegan.
