Super Bowls

When I think about Super Bowls, I think of these:

Ian has a different perception of the term.  But while you won't catch me yelling at sweaty dudes on the television, I do consider the Super Bowl of Ian's liking to be a great time to put together some fun dishes!

One of Ian's favorites is the Buffalo Chicken Dip I make him.  Want the recipe?  Here you go:

Ingredients:


  • 1 (8 ounce) package cream cheese, softened (I use low fat)


  • 1/2 cup chunky blue cheese salad dressing (if you're not a blue cheese nut like me, use ranch)


  • 1/2 cup hot sauce or wing sauce


  • 1/2 cup crumbled blue cheese


  • Rotisserie chicken, shredded


  • Celery stalks and crackers


  • Directions:
    1. Heat the oven to 350 degrees.
    2. Stir the softened cream cheese in a 9-inch deep dish pie plate with a fork or whisk until it's smooth. Stir in the blue cheese dressing, hot sauce and blue cheese. Stir in the chicken.
    3. Bake for 20 minutes or until the chicken mixture is hot and bubbly. Stir before serving. Serve with the vegetables and crackers for dipping.
    If you are not yet engaged or married, I do say that you might get your boyfriend down on a bended knee after this one. 

    I'm serious!!!

    2. Thank you for not using canned chicken. I didn't think you would anyway but some do - ahhh!!! :)

      Interesting way to do it - I'll have to try it sometime! I put the cream cheese on the bottom of a 9x13, then put the chicken (1.5 lbs) that has been marinating in buffalo sauce for 30 minutes on the cream cheese. Then pour a bottle of ranch (or blue cheese) on top. Oven for 20 minutes at 350.
