Two Ingredient Appetizer Heaven: Cheese Stuffed Peppers

The disclaimer here is that this recipe technically has three ingredients ... BUT one is olive oil. And I mean, that's a cabinet staple, right?! Something that you always have on hand in your pantry?

We will go with that and agree that this recipe just has TWO ingredients. :)


So you'll want to grab a bag of sweet mini-peppers (around $2.99) and some mozzarella string cheese.

Slice the peppers in half and cut the string cheese to fit the inside wells of the peppers. Line a baking sheet with tin foil, put the cheese-stuffed peppers on the foil, and drizzle with olive oil.

Set your oven to broil, pop those peppers under the hot coils, and let them get nice and melty and charred. It should only take a few minutes, so keep an eye on them!

And that's it. Easiest appetizer ever, low-carb, and quite yummy.

  5. Ironically, I just saw a similar recipe and am making them this week! I have fancy schmancy goat cheese on hand, so I'm using that instead, but I don't usually keep that so the string cheese idea is excellent!
