No KALE. No CHIA. No ZOODLES.
Just a good ol' fashioned side dish that contains whipped topping and marshmallows. I can definitely wrap my head around that.
1 (3.4 ounce) package instant pistachio pudding mix
1 (8 ounce) can crushed pineapple, with juice
1 cup miniature marshmallows
1/2 cup chopped walnuts
1/2 (8 ounce) container frozen whipped topping, thawed
In a large bowl, mix together pudding mix, pineapple with juice, marshmallows, and nuts.
Fold in whipped topping. Chill.

I love a recipe whose last line is "chill." Is this referring to the dish, or the dish preparer? Let's go with the dish preparer. And chill I did, because I knew that I had some green fluffy goodness awaiting me for dinner.
This is one of my very favorite "salads" - this post made my mouth water, ha-ha!

ReplyDeleteOh my goodness - I love that stuff! Can you believe I never tasted it until I was in my 30s! My grandma sometimes made it when I was little for Sunday dinners and I would not taste it. I guess since it was green and kind of lumpy? Can't believe I missed out on it for so long!

ReplyDeleteOh my goodness, I LOVE this! It's always on the table for Thanksgiving and Christmas, but for some reason I rarely make it during the year....however, it's now on the list for next week!
ReplyDeleteThis was a childhood staple . . . it always cracked me up how it was a "side" dish that seemed more like dessert! I love Watergate Salad!!

ReplyDeleteIt's so retro - I try to get to the local famers' market every Friday to get their "cherry delight salad" which basically subs pistachio pudding for cherry and adds in cherry jello. It's such a favorite!
ReplyDeleteYUM! I made a classic ambrosia salad a few weeks ago that was canned and jarred fruits and whipped topping and I think the retro-vibe made me love it even more!
