I served it at room temperature per Natalie's recommendation.
This was truly a stellar recipe! Sweet, tangy, so much flavor.
I purchased the pancetta from Trader Joe's in a little package and they have the best price I've found on it.
For the recipe, click here. I'd recommend adding this to your meal plan before peaches go out of season!
That looks so delicious!! I have been experimenting the last month with salads and I have got to say I never even thought about putting all of this together as a salad. Now if I can just get my hands on some peaches, might have to pay a trip to the Farmer's Market this weekend!!!
ReplyDeleteLOVE peaches in salads - I bet this would benefit from my grilling-of-the-peaches twist, too!
ReplyDeleteOMG! This sounds absolutely amazing! Making this ASAP!

Looks delish!! I've found that if you have your supermarket deli slice the pancetta for you, it ends up being WAY cheaper than any packaged pancetta!
ReplyDeleteLooks delish! And I don't ever say that word. ;) Definitely putting this on the menu next week.
ReplyDeleteLooks really good! I think I'll try making this tonight. Thanks!
ReplyDeleteI love her salad recipes- this one looks awesome! I'll have to check it out!
ReplyDeleteI always use that little Trader Joe's pancetta pack for pastas, soups, and omelettes...now I have a new reason to try it out! This looks fabulous!
