Fresh Apple Cake

When the produce is so bountiful this time of year, I am always happy to find a tasty and easy recipe to add to our collection.  This recipe is so darn simple, and you can sub in whatever type of fruit you have on hand.

Fresh Apple Cake

Ingredients:
Fresh Fruit, sliced if large (I used two Rome apples)
Package yellow cake mix
Stick of butter

Layer your apple slices (or other fruit) at the bottom of a pan that has been coated with non-stick spray. I love using a 9x13 Pyrex dish just like this one.

Sprinkle on boxed cake mix.

I didn't even use the entire box -- save a little if you please, and then you can use it to make single-serving versions of this same recipe when you get a sweet tooth!

Melt an entire stick of butter in your glass measuring cup.
Don't judge me.

Pour butter over the fruit and dry cake mix.

Edit: Usually, I've found that the butter and the moisture from the fruit is enough to soak into the dry mix and create a nice cooked crust.  If, however, when cooking, you find that some of your cake mix still looks powdery, you can try sprinkling a few tablespoons of water over those areas to ensure thorough cooking.  You could also do this preemtively at this point when you've poured the butter over the dry cake mix.

Bake at 350 degrees for approximately 35-45 minutes -- it's done when it is nice and bubbly.

We topped ours, of course, with a little vanilla ice cream.  Americana at its best!

Three ingredients, and a stellar recipe.  I can truly recommend this as a must-try!

I'd love to hear your tweaks to the recipe that have worked well for you -- I made this recipe last month using blueberries and it was positively delicious :)  Happy baking, ya'll.

  30. I bet a spice cake would be great. I wonder if mixing the butter/cake mix first would solve the powder problem? I bet chopped apples in the bottom of muffin cups and then mixing the batter and dividing into the muffin cups would work for portioning. Love the carmelized brown sugar idea too!

I am definitely going to try the apple next time I make it.

  52. If you use a little apple cider with the apples I think it would help firm up your crust. I usually make this but I cook the apples on the stovetop a bit with cider sugar, cinnamon to make an almost apple pie filling to put on the bottom to work withe the butter. I also cut the butter up into pats instead a little more work but the crust is delicious! Yummy

  55. When we made it, it seemed to be really mushy and almost as if it wasn't baked all the way. we left it in longe too. we knew it wouldn't be bad to eat cause here are no eggs in it. any suggestions on how to fix the "not thoroughly cooked" problem? still tasted good though.

  56. This isn't exactly dump cake. True dump cake is a little more involved than this and usually uses pie filling, not fresh fruit. This is close, but this is definitely more of a poor man's version. I'm still gonna try it though!

  60. I made this tonight. It was delicious even though there were some dry spots in the cake mix. Next time I would try mixing the cake mix with the butter before dumping it over the apples. It would be great over peaches, too. It's almost like a very sweet cobbler more than a cake. My husband loved it.

    ReplyDelete
  61. This was so easy and really tasty. I did a couple revisions based on other comments...mixed the apples in a bit of cinnamon and sugar, and added a sprinkling of oats and brown sugar on top of the cake mix. Then added the full stick of butter. :) Oh and there were a COUPLE small dry spots, mainly around the edges, but I just covered them with a bit of water (as said in the recipe), stuck it back in the oven and it was great. Served it with some whip cream. I will SO make this again!!

    ReplyDelete
  62. Easier: two cans of peaches, strain some of the juice. Cake mix, buyer. Sprinkle with cinnamon or nutmeg. Go! Best cobbler.

    ReplyDelete
  63. Yes, I usually make this with two cans of pie filling - same or mixed flavors. I got it as a "dump" recipe for cobbler. I've also used canned fruit - if it's already sweetened, I don't add sugar. If it's not already sweetened, then I add white sugar and brown sugar. It is good when done correctly. But, it is difficult when using fresh fruit to know how much to use.

    ReplyDelete

  66. Made this yesterday for my brother for his birthday and he absolutely loved it! He wants more lol. I did change it up. I used two sticks of butter. Cut them in slices and melted a wee bit. Used one stick in the beginning and halfway through baking I added the other stick and stirred it up a bit to moisten the dry spots. I also put brown sugar and cinnamon on my apples. So yummy and worth trying this recipe Ty much;D

  68. I made this tonight taking the advice from other comments. I sprinkled brown sugar and cinnamon on the apples first, and only used 1/2 the bag of cake mix. I didn't have yellow cake mix so I used white. After pouring the butter on, any spots that were still dry, I sprayed it with spray butter. It was delicious and my husband loved it. Next time I think I will Peel the apples though.

  70. How could anyone think this is going to be "like a cake"? This is clearly just "like a dump cake" recipe. It's going to end up more like a crumb topping.

    ReplyDelete
  71. Making this right now and it's not looking good. There is still alot of powdering cake mix all over. I tried sprinkling water on top and still didn't work. I just put some brown sugar on top to see what that will do. So far not a success. It's soo weird how things turn out soo differently when you follow the same directions as the next person.

  72. I learned how to make this recipe years ago! Yes it is yummy. Although less healthy, you can use canned pie filling of any kind of fruit you like.

    ReplyDelete
  73. We did this in boy scouts with canned fruit (peaches, mmm), either white or yellow cake mix, and slicing the butter. Bake in a dutch oven at the fire and it is wonderful and very easy. Cherry pie filling and a brownie mix is nice, too.

  74. I have been doing a version of this for years take can fruit peaches or apples drained all the way i like uing 2 cans but have used one and one jiffy yellow cake mix about 79 cents and some butter melted I pour in a 9X13 I use just enough butter to drizzle over the top of the mix then I sprinkle cinnamon and sugar over the top! Ever so yummy

  75. The bonus to using cold butter on the dry spots is that cold butter makes it crisp. I tossed cinnamon and brown sugar in with apples. I really like this recipe. I have had this with cherries, she couldn't find the recipe. Thank you for posting. :)

  76. Sooo made this as a thanksgiving dessert and it came out YUMMYYYY!!! Everyone loved it!! I added brown sugar and cinnamon to the apples and used 2 sticks of butter..one completely melted that I poured over the cake mix and cut some thin slices from the second stick of butter and placed them on the dry spots..baked it for 45 mins and it came out wonderful!!!!!

  77. I used a mix of large apples, just used the apple cuted and then cut them again. I then used 3/4 a bag of cake up. Part if the mix then the butter. It didn't seems to cover well so then I added another lay of mix and another stick of butter. Still a couple dry spot when I i check half way so added a little. Cooked about 15 minutes until done then broiled about 5 minutes awesome

  78. Thanks for the easy recipe, my husband loved it! Here is what I did... I only made a single serving and used half of Honey Crisp apple covered with sprinkles of cinnamon and brown sugar (as suggested) cover it with the cake mixed, used pam spray to cover the mix, used 1/4 c of melted butter, and more brown sugar and baked for 20 mins. After 20 mins I added 1tbs of cut up cold butter then boiled for 15 more mins... viola! a awesome desserts! Next time I will peel the apple Thanks!!

  104. I was unsure of what size pan to use but chose a 9 x 13 since the picture looked oblong to me. I first sprayed the pan and then sprinkled on a bit of the cake mix. After slicing up 2 apples I could tell it needed more and that the original recipe could probably be done in an 7 x 11. I wasn't concerned since it seemed like many didn't use the entire cake mix. I added 2 more apples. I sprinkled the apples with a mixture of brown sugar and cinnamon. I sprinkled a bit of the cake mix over the apples. Next I sprinkled about a cup of the Kraft caramel bits and spread the remaining cake mix. Drizzled with 1 stick of melted butter. I added some chopped pecans and a packet of maple & brown sugar oatmeal to my remaining cinnamon and brown sugar mixture and sprinkled over pan. I wrapped it up by drizzling another stick of butter over the pan and baked it for 45 minutes. YUM!

  114. I decided to use 2 9" pans, cutting up 3 fuji apples and 3 yellow/green apples. The butter didn't seem to be enough to soak up the cake mix, so I ended up getting pretty creative. I stirred in some homemade cinnamon/sugar apple sauce and some cinnamon/vanilla Coffeemate creamer, stirring and then baking (longer). It really ended up tasting DELICIOUS, though it looked like apple goop and I had no ice cream to cover it up. :) Great recipe idea, though!
