Enchilada Recipe. Make Now!

So, I totally teased you the other day when I mentioned that I made the best recipe in the history of mankind and then I didn't give you the recipe.  But I promise, the wait was worth it!
First things first:  Pinterest ... I love you.  I love your gobs and gobs of delightful recipe pictures that expose me to a culinary world I can't find in my own cookbooks.  Or with a Google search, or even an Allrecipes search, sometimes.

Chicken and White Bean Enchiladas with Creamy Salsa Verde -- recipe found here on Skinnytaste.  Gina, you are a culinary genious, my friend.


I'm slightly afraid you won't click over to get the recipe from Skinnytaste, but I feel like it wouldn't be doing the amazingly talented Gina justice to simply copy and paste it here.  She deserves for you to visit her site, honestly!  And plus, you will probably find some other fantastic recipes to pin while you're there. 

Ian thought I was a kitchen goddess for this recipe, by the way.

In other news, I added a picture of us to the dining room!


Cutting the cake at our wedding.  Which just happened to occur under the same chandelier as the one that hangs in that very dining room, which I told you about in this post.


I had it printed in a sepia tone to pick up the warmer tan hues of the frame and the toile fabric on the dining room chairs.

Now, almost time to get the chair rail added to the dining room -- can't wait!

  4. I have had that recipe pinned now for several weeks and cannot wait to make it! We have some sort of Mexican dish at least every other week in my house! Thanks for the yummy preview. Now I want to go home and cook some immediately :)

  8. I have made those enchiladas before for my parents but I never had any. I really need to make them again. They loved them too.

    The picture looks gorgeous.

  11. Recipe printed and added to the menu for next week. (Of course I just did a food shop for this week.) Had King Ranch Chicken for dinner last night which is a perfect precurser to this lovely find! Thanks for sharing!
