Hello Weekend!

I haven't traveled a lick this week which makes for one looooong week in the office.  And it also makes for one happy girl considering that it is almost officially the WEEKEND!

We don't have a lot on the books for the weekend, which is exactly what makes us happy.  Maybe a low-key evening tonight with a movie and take-out.  Tomorrow in uptown Charlotte there will be a lot of hooplah going on for the ACC tournament ... something that I don't really care about at all, but Ian assured me that there would be a lot to do, a lot of excitement, and a lot of people-watching.  Done and done.

As you know from my post on Monday, we just celebrated our 6-month wedding anniversary.  Some may think it silly to celebrate the small milestones, but not me.  Much to my husband's dismay delight, no milestone is too teensy for me to recognize.

When I came home the other night, I walked right into the kitchen to find this:


I am one fortunate girl, I really am.  I started cooking dinner for us which consisted of Ian's favorite little thing -- the parmesan crisps I make.  They're so darn easy and good for a low-carber like him and a cheese lovah like me.  


You just pile little flat stacks of parmesan cheese in a hot pan (medium heat) and heat until golden brown on the bottom.  Then flip with a metal spatula.  They get nice and crispy, like chips!  They are great toppers for salads, too.


I cooked us a special dinner of roasted cornish hens with green beans and sauteed kale.


And what is a proper celebration without ... champagne!  This bottle is actually one that I brought back from our honeymoon in Dominican Republic.  They gave it to us on our breakfast in bed on the last morning, and I decided to save it.  Into the suitcase it went!



Here's to many more small celebrations!

  1. Yay for 6 months, and how sweet were those roses!? And, I can't wait to try those parmesan crisps...they look easy to make and delicious, which fulfills my 2 requirements for cooking! Have a great weekend!
